Equipment

  • Baking sheet
  • Parchment paper or silicone baking mat
  • Rolling Pin
  • Sharp knife or pastry cutter

Ingredients

  • 1 sheet of puff pastry (store-bought or homemade, thawed if frozen)
  • 1/2 cup granulated sugar
  • 1 teaspoon ground cinnamon (optional, for a spiced variation)

Instructions

  • Preheat Your OvenPreheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone baking mat to prevent sticking.
  • Prepare the Puff Pastry
Lightly flour a clean surface and place your puff pastry sheet on it.
Roll out the pastry slightly to ensure an even thickness, about 1/8 inch
  • Add Sugar (and Cinnamon, if desired)
Sprinkle granulated sugar evenly over the surface of the pastry.
If you’re using cinnamon, mix it with the sugar beforehand for an even distribution.
Press the sugar into the pastry gently with the rolling pin to ensure it adheres.
  • Shape the Palmiers
Fold one long edge of the pastry inward toward the center.
Repeat with the opposite edge so they meet in the middle.
Fold each side again toward the center to create a double roll.
Finally, fold one side over the other, creating a log-like shape.
Chill the pastry log in the refrigerator for 10-15 minutes to firm it up, making it easier to cut.
  • Slice and Arrange
Use a sharp knife or pastry cutter to slice the log into 1/2-inch thick pieces.
Place the slices cut side up on the prepared baking sheet, leaving enough space between them to allow for spreading.
  • Bake to Perfection
Bake the palmiers in the preheated oven for 6-8 minutes on one side.
Flip them over carefully and bake for another 6-8 minutes, or until golden brown and caramelized.
Keep a close eye during the final minutes to avoid burning the sugar.
  • Cool and Serve
Transfer the palmiers to a wire rack to cool completely.
Enjoy them as-is or pair them with coffee, tea, or hot chocolate.
