Fried rice has a long history in Chinese cuisine, dating back to the Sui Dynasty (589–618 AD). It was originally created as a way to repurpose leftover rice and ingredients. Over time, fried rice became popular across China and eventually worldwide, with various regional adaptations.

- 3 cups of cooked and chilled white rice (preferably day-old)
- 1/2 pound of pork (loin or shoulder), diced
- 2 tablespoons of soy sauce
- 1 tablespoon of oyster sauce
- 2 tablespoons of vegetable oil
- 1 small onion, finely chopped
- 2 cloves of garlic, minced
- 1 cup of frozen peas and carrots, thawed
- 2 large eggs, beaten
- 3 green onions, sliced
- Salt and pepper to taste
Prepare the Ingredients:Dice the pork into small, bite-sized pieces. Finely chop the onion and mince the garlic.Slice the green onions.
Marinate the Pork:In a small bowl, mix the diced pork with 1 tablespoon of soy sauce and let it marinate for about 10 minutes. Cook the Eggs:Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the beaten eggs and scramble until fully cooked. Remove the eggs from the skillet and set aside.
Cook the Pork:In the same skillet, add the remaining tablespoon of oil. Add the marinated pork and cook until browned and cooked through, about 5-7 minutes. Remove the pork from the skillet and set aside.
Sauté the Vegetables:Add the chopped onion and garlic to the skillet and sauté until the onion is translucent and the garlic is fragrant, about 2 minutes. Combine Ingredients:Add the cooked rice to the skillet, breaking up any clumps with a spatula.Stir in the peas and carrots, and cook for another 2-3 minutes until the vegetables are heated through. Season and Serve:Return the cooked pork and scrambled eggs to the skillet.Stir in the remaining soy sauce, oyster sauce, and green onions. Mix everything well and cook for an additional 2 minutes, allowing the flavors to meld together.Season with salt and pepper to taste.
Serve:Serve the pork fried rice hot, garnished with extra sliced green onions if desired.
