Pork ribs have deep roots in American barbecue culture, especially in the Southern U.S. Barbecue tradition dates back to Indigenous cooking methods, adapted by early settlers to include new ingredients and techniques. Today, ribs are a centerpiece of BBQ joints across the South, with each region developing its own distinct style—think Kansas City’s sweet, sticky ribs or Memphis’s dry rub style.

Ingredients
  

  • Pork Ribs (baby back or spare ribs) – 2 racks
  • Salt – 1 tablespoon
  • Black Pepper – 1 tablespoon
  • Paprika – 1 tablespoon
  • Garlic Powder – 1 tablespoon
  • Brown Sugar – 2 tablespoons
  • Olive Oil – 2 tablespoons
  • Apple Cider Vinegar – 1/4 cup
  • BBQ Sauce (store-bought or homemade) – 1 cup

Instructions
 

  • Prepare the Ribs
    Preheat your oven to 275°F (135°C).
  • Remove the silver skin (thin membrane) on the back of the ribs to help them cook evenly and become more tender. Use a knife to lift one corner, then grab it with a paper towel and pull it off.
  • Season the Ribs
    In a small bowl, combine the salt, black pepper, paprika, garlic powder, and brown sugar.
  • Rub olive oil over both sides of the ribs, then generously coat the ribs with the spice mixture.
  • Prepare the Foil Pack
    Place the seasoned ribs on a baking sheet. Cover them with aluminum foil, sealing the edges tightly to create a packet.
  • This helps the ribs retain moisture while cooking slowly.
  • Bake the Ribs
    Place the ribs in the preheated oven and bake for 2 1/2 hours. The low and slow cook time tenderizes the meat.
  • Add the BBQ Glaze
    After baking, remove the ribs from the oven and carefully peel back the foil.
  • Brush a generous layer of BBQ sauce on both sides of the ribs.
  • Increase the oven temperature to 400°F (200°C) and place the ribs back in the oven, uncovered, for 20-30 minutes to caramelize the BBQ sauce.
  • Rest and Serve
    Remove the ribs from the oven and let them rest for 5 minutes before cutting.
  • Slice between the bones, serve with extra BBQ sauce on the side, and enjoy!
