Ingredients
  

  • 4 pounds of pork shoulder blade roast
  • 2 tablespoons of olive oil
  • 2 teaspoons of salt
  • 1 teaspoon of black pepper
  • 1 teaspoon of paprika
  • 1 teaspoon of garlic powder
  • 1 teaspoon of dried thyme
  • 1 teaspoon of dried rosemary
  • 2 onions, quartered
  • 4 carrots, chopped
  • 4 potatoes, diced
  • 1 cup of chicken or vegetable broth

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • In a large oven-safe pot or Dutch oven, heat the olive oil over medium-high heat.
  • Season the pork roast with salt, pepper, paprika, garlic powder, thyme, and rosemary.
  • Sear the pork on all sides until browned.
  • Add onions, carrots, and potatoes around the pork.
  • Pour in the chicken or vegetable broth.
  • Cover the pot and roast in the preheated oven for approximately 2.5 to 3 hours or until the pork is tender and easily shreds with a fork.
  • Serve the roast with the vegetables, and enjoy!
