The origin of the Reuben sandwich is a bit of a mystery, with several competing stories. One popular version credits Reuben Kulakofsky, a grocer in Omaha, Nebraska, who reportedly invented the sandwich for his poker group at a local hotel in the 1920s. Another tale attributes the sandwich to Arnold Reuben, a New York City deli owner known for his inventive sandwiches. Regardless of its true origin, the Reuben has become an American classic loved by many.

Equipment

Ingredients
  

  • 2 slices of rye bread (marble rye is also a great choice)
  • 2-3 slices of corned beef (about 3 oz.)
  • 2 slices of Swiss cheese
  • 1/4 cup sauerkraut (well-drained)
  • 2 tablespoons Russian or Thousand Island dressing
  • 1 tablespoon unsalted butter

Instructions
 

  • Place the rye bread slices on a clean surface. Spread about 1 tablespoon of dressing on each slice of bread.
  • Lay a slice of Swiss cheese on each piece of bread. This helps the cheese melt evenly and acts as a "barrier" to prevent sogginess from the sauerkraut.
  • On one slice of bread, add the corned beef slices, arranging them evenly across the bread.
  • Spoon the drained sauerkraut evenly over the corned beef.
  • Carefully place the second slice of bread (with the cheese facing down) on top to form the sandwich.
  • Butter the Bread
    Spread a thin layer of butter on the top slice of bread. This will help the bread crisp up while grilling.
  • Grill the Sandwich
    Heat a skillet or griddle over medium heat. Once hot, place the sandwich in the skillet with the buttered side down.
  • Butter the other side of the sandwich (now the top) while the bottom is grilling.
  • Cook Until Golden and Melty
    Grill the sandwich for about 3-4 minutes on each side, or until the bread is golden brown and the cheese has melted. Use a spatula to press the sandwich gently while grilling to ensure even heating.
  • Serve
    Once the sandwich is grilled to perfection, remove it from the skillet and let it cool for a minute. Slice the sandwich in half and serve immediately.
