- 1/3 cup breadcrumbs (plus extra for coating)
- 1/4 cup diced onion
- 2 tablespoons fresh parsley, chopped
- 1 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1/4 teaspoon cayenne pepper (optional, for a spicy kick)
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 large eggs
- 1 tablespoon mayonnaise (or sour cream)
- 1 tablespoon fresh lemon juice
- 2 tablespoons vegetable oil (for frying)

Prepare the Salmon MixtureIf using canned salmon, drain it and remove the skin and bones if desired (though these are edible and nutritious). In a large mixing bowl, flake the salmon with a fork. Add breadcrumbs, diced onion, parsley, garlic powder, paprika, cayenne pepper, salt, and black pepper.
Mix in the eggs, mayonnaise, and lemon juice until the ingredients are well combined. The mixture should be slightly sticky but firm enough to hold its shape.
Shape the CroquettesScoop about 1/4 cup of the mixture and shape it into a patty or oval. Repeat until all the mixture is used. Place extra breadcrumbs on a plate and coat each patty evenly, pressing lightly to ensure the breadcrumbs stick.
Fry the CroquettesHeat vegetable oil in a skillet over medium heat. Once the oil is shimmering, carefully place the croquettes in the skillet without overcrowding. Fry for 3–4 minutes on each side or until golden brown and crispy.
Transfer the cooked croquettes to a paper towel-lined plate to absorb excess oil.
