Salmon Croquettes Recipe

Pinklady
The word "croquette" comes from the French term "croquer," meaning "to crunch." Initially a high-end French delicacy, croquettes were adapted in America during the 19th and 20th centuries as canned salmon became widely available.

Equipment

  • Mixing bowlels
  • Fork or whisk
  • Frying pan
  • Spatula
  • Plate lined with paper towels

Ingredients

For the Croquettes:

  • 2 (14.75 oz) cans of salmon (or 2 cups fresh, cooked salmon)
  • 1/2 cup breadcrumbs (or crushed crackers)
  • 1/4 cup diced onion
  • 2 cloves garlic, minced
  • 1/4 cup chopped parsley
  • 1/4 cup mayonnaise
  • 2 large eggs, beaten
  • 1 tsp Dijon mustard
  • 1 tsp paprika
  • 1/2 tsp salt (adjust to taste)
  • 1/2 tsp black pepper
  • 1 tbsp lemon juice

For Frying:

  • 1/2 cup all-purpose flour (for coating)
  • 1/2 cup vegetable oil (or your preferred frying oil)

Instructions

  • Prepare the Salmon Mixture
Drain the canned salmon and remove any large bones (if using fresh salmon, flake it with a fork).
In a large mixing bowl, combine the salmon, breadcrumbs, onion, garlic, parsley, mayonnaise, eggs, Dijon mustard, paprika, salt, pepper, and lemon juice. Mix thoroughly until all ingredients are well combined.
  • Shape the Croquettes
Use your hands to form the mixture into patties, about 2-3 inches in diameter and 1 inch thick.
Lightly coat each patty with all-purpose flour to ensure a crisp outer layer when frying.
  • Heat the Oil
Heat vegetable oil in a frying pan over medium heat. You’ll need enough oil to cover the bottom of the pan, about 1/4 inch deep.
Test the oil by dropping in a small piece of the mixture; it should sizzle immediately.
  • Fry the Croquettes
Place the patties in the pan, ensuring they’re not overcrowded.
Fry each side for 3-4 minutes or until golden brown and crispy.
Use a spatula to flip them carefully to prevent breaking.
Once cooked, transfer the croquettes to a plate lined with paper towels to absorb excess oil.
  • Serve
Serve the croquettes warm with your choice of dipping sauce, such as tartar sauce, spicy aioli, or ketchup.
Pair with a fresh salad, rice, or roasted vegetables for a complete meal.
