- 1 can (14.75 ounces) salmon, drained and flaked
- 1/2 cup breadcrumbs
- 1/4 cup finely chopped onion
- 1/4 cup finely chopped bell pepper
- 1 egg, lightly beaten
- 2 tablespoons mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon lemon juice
- 1 teaspoon Old Bay seasoning (optional)
- Salt and pepper to taste
- 2 tablespoons olive oil for frying
In a mixing bowl, combine the flaked salmon, breadcrumbs, chopped onion, chopped bell pepper, egg, mayonnaise, Dijon mustard, lemon juice, Old Bay seasoning (if using), salt, and pepper. Mix until well combined.
Shape the mixture into patties, about 2-3 inches in diameter.
Heat olive oil in a skillet over medium heat. Once hot, add the salmon patties to the skillet, cooking for 3-4 minutes on each side or until golden brown and crispy.
Once cooked through, remove the patties from the skillet and place them on a paper towel-lined plate to drain any excess oil.
