Equipment

Ingredients
  

  • 1 pound Italian sausage (sweet or hot, according to preference)
  • 3 bell peppers (red, green, yellow, or a mix), sliced
  • 2 large onions, sliced
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes (optional, for heat)
  • Salt and pepper to taste
  • 1/2 cup chicken broth or white wine (optional, for deglazing)
  • Fresh parsley, chopped (for garnish)
  • Hoagie rolls or crusty Italian bread (optional, for serving)

Instructions
 

  • Get the ingredients ready: Dice the onions and bell peppers. Dice the garlic
  • Prepare the Sausage: One tablespoon of olive oil should be heated over medium heat in a big skillet.
  • After adding the sausages, heat for about ten minutes, or until browned all over. Take out and place aside from the skillet.
  • Prepare the Veggies: Pour the remaining olive oil into the same skillet.
  • Add the bell peppers and onion slices. They should soften after around five to seven minutes of sautéing.
  • Add the red pepper flakes (if using), oregano, basil, and minced garlic. Simmer for a further two to three minutes.
  • Mix and Cook: Cut the browned sausages into small pieces using a knife. Return the sausage chunks to the skillet along with the veggies.
  • To deglaze the pan and scrape out any browned bits from the bottom, pour in the white wine or chicken broth.
  • For around ten minutes, or until the sausages are thoroughly cooked and the flavors combine, simmer everything together.
  • After seasoning, serve: To taste, add salt and pepper for seasoning. Add some freshly cut parsley as a garnish.
  • Serve hot on thick Italian bread, in hoagie buns, or on its own.
