- 2 pounds boneless, skinless chicken breasts
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1 teaspoon chili powder
- Salt and pepper to taste
- 1 cup chicken broth
- 1 lime, juiced
- Fresh cilantro for garnish (optional)
In a large pot or Dutch oven, heat olive oil over medium heat. Add diced onions and minced garlic, and cook until softened.
Season chicken breasts with cumin, paprika, chili powder, salt, and pepper. Add seasoned chicken to the pot and brown on both sides.
Pour chicken broth and lime juice over the chicken. Bring to a simmer, then cover and cook for 20-25 minutes, or until the chicken is cooked through and tender.
Remove chicken from the pot and shred using two forks. Return shredded chicken to the pot and simmer for an additional 5-10 minutes to absorb the flavors.
Serve shredded chicken warm, garnished with fresh cilantro if desired.
