Start by browning the pork. Heat a skillet over medium-high heat, add a bit of oil, and sear the pork pieces until they're browned on all sides. This step adds a depth of flavor to the posole.
Transfer the seared pork to your slow cooker.
Add the hominy, chopped onion, minced garlic, diced green chilies, cumin, and dried oregano to the slow cooker.
Pour in the chicken broth, and season with salt and pepper. Stir everything together.
Cover the slow cooker and cook on low for 6-8 hours or on high for 4-6 hours. The long, slow cooking time allows the flavors to meld together beautifully.
When the posole is ready, serve it hot with your choice of toppings, such as shredded cabbage, radishes, lime wedges, and chopped cilantro.
