Ingredients
  

  • 2 pounds of boneless pork shoulder, cut into chunks
  • 2 cans (15 ounces each) of hominy, drained and rinsed
  • 1 large onion, chopped
  • 3 cloves of garlic, minced
  • 1 can (4 ounces) of diced green chilies
  • 2 teaspoons of ground cumin
  • 1 teaspoon of dried oregano
  • 4 cups of chicken broth
  • Salt and pepper to taste

Instructions
 

  • Start by browning the pork. Heat a skillet over medium-high heat, add a bit of oil, and sear the pork pieces until they're browned on all sides. This step adds a depth of flavor to the posole.
  • Transfer the seared pork to your slow cooker.
  • Add the hominy, chopped onion, minced garlic, diced green chilies, cumin, and dried oregano to the slow cooker.
  • Pour in the chicken broth, and season with salt and pepper. Stir everything together.
  • Cover the slow cooker and cook on low for 6-8 hours or on high for 4-6 hours. The long, slow cooking time allows the flavors to meld together beautifully.
  • When the posole is ready, serve it hot with your choice of toppings, such as shredded cabbage, radishes, lime wedges, and chopped cilantro.
