- 2 pounds of boneless pork shoulder, cut into chunks
- 2 cans (15 ounces each) of hominy, drained and rinsed
- 1 large onion, chopped
- 3 cloves of garlic, minced
- 1 can (4 ounces) of diced green chilies
- 2 teaspoons of ground cumin
- 1 teaspoon of dried oregano
- 4 cups of chicken broth
- Salt and pepper to taste
Instructions
- Start by browning the pork. Heat a skillet over medium-high heat, add a bit of oil, and sear the pork pieces until they're browned on all sides. This step adds a depth of flavor to the posole.
- Transfer the seared pork to your slow cooker.
- Add the hominy, chopped onion, minced garlic, diced green chilies, cumin, and dried oregano to the slow cooker.
