- 4 cups yellow squash, sliced
- 1/2 cup onion, chopped
- 1/4 cup butter
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/2 cup mayonnaise
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- Cooking spray
Preheat the oven to 350°F (175°C). In a large skillet, melt the butter over medium heat.
Add the chopped onion and squash, and sauté until tender, about 8 to 10 minutes.
Remove from the skillet and let cool slightly. In a mixing bowl, combine the sautéed onion and squash with the shredded cheddar cheese, sour cream, mayonnaise, garlic powder, salt, and black pepper.
Mix well. Transfer the mixture to an evenly-spread casserole dish. In a separate bowl, combine the breadcrumbs and grated Parmesan cheese.
Sprinkle this mixture over the squash mixture in the casserole dish. Lightly spray the breadcrumb topping with cooking spray.
Bake the squash casserole in the preheated oven for 25 to 30 minutes
Remove from the oven and let it cool for a few minutes before serving.
