Ingredients
  

  • 4 cups yellow squash, sliced
  • 1/2 cup onion, chopped
  • 1/4 cup butter
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • Cooking spray

Instructions
 

  • Preheat the oven to 350°F (175°C). In a large skillet, melt the butter over medium heat.
  • Add the chopped onion and squash, and sauté until tender, about 8 to 10 minutes.
  • Remove from the skillet and let cool slightly. In a mixing bowl, combine the sautéed onion and squash with the shredded cheddar cheese, sour cream, mayonnaise, garlic powder, salt, and black pepper.
  • Mix well. Transfer the mixture to an evenly-spread casserole dish. In a separate bowl, combine the breadcrumbs and grated Parmesan cheese.
  • Sprinkle this mixture over the squash mixture in the casserole dish. Lightly spray the breadcrumb topping with cooking spray.
  • Bake the squash casserole in the preheated oven for 25 to 30 minutes
  • Remove from the oven and let it cool for a few minutes before serving.
