Ingredients
  

  • 5 large eggs
  • ½ cup cottage cheese
  • ½ cup shredded Gruyere cheese
  • ¼ cup heavy cream
  • 4 slices of cooked bacon, crumbled
  • ¼ teaspoon salt
  • ⅛ teaspoon black pepper
  • 1 tablespoon olive oil (for greasing)
  • Optional: chopped spinach, bell peppers, or mushrooms for added flavor.

Instructions
 

  • Preheat your oven to 300°F (150°C). If using a sous vide machine, set the water bath to 172°F (78°C).
  • In a blender or food processor, combine the eggs, cottage cheese, heavy cream, salt, and pepper.
  • Blend on high for 30 seconds until the mixture is smooth and frothy. This step is crucial for achieving the signature fluffiness.
  • Grease your muffin tin or silicone molds with olive oil.
  • Evenly distribute the crumbled bacon and shredded Gruyere cheese into each mold. For added flavor, sprinkle in your choice of vegetables.
  • Pour the egg mixture into the molds, leaving about ⅛ inch of space at the top to prevent overflow.
  • Place the muffin tin on a baking tray. Fill the tray with hot water until it reaches halfway up the sides of the muffin tin. This water bath mimics the sous vide process, ensuring even cooking.
  • Cover the muffin tin with aluminum foil to lock in moisture. Bake in the preheated oven for 30 minutes or until the egg bites are set and slightly jiggly in the center.
  • Remove the egg bites from the oven and allow them to cool for 5 minutes before removing them from the molds. Serve warm and enjoy!
