Ingredients
  

  • 2 large sweet potatoes, peeled and grated
  • 1 onion, finely chopped
  • 2 eggs, beaten
  • 1/4 cup all-purpose flour
  • 1 teaspoon baking powder
  • Salt and pepper to taste
  • Vegetable oil for frying

Instructions
 

  • Grate the sweet potatoes and finely chop the onion.
  • In a bowl, combine the grated sweet potatoes, chopped onion, beaten eggs, flour, baking powder, salt, and pepper.
  • Heat vegetable oil in a frying pan over medium heat.
  • Spoon the sweet potato mixture into the pan, shaping it into pancakes. Fry until golden brown on each side.
  • Place the latkes on paper towels to absorb excess oil.
