Tamale pie originated in the United States in the early 20th century as a Tex-Mex-inspired dish. It was created as a simpler, more accessible way to enjoy the flavors of tamales without the time-consuming process of assembling and steaming them in corn husks.

Ingredients
  

For the filling:

  • 1 lb (450g) ground beef (or ground turkey for a lighter option)
  • 1 small onion, diced
  • 1 bell pepper (red or green), diced
  • 2 cloves garlic, minced
  • 1 cup frozen corn
  • 1 cup canned black beans, rinsed and drained
  • 1 (14 oz) can diced tomatoes
  • 2 tbsp tomato paste
  • 1 packet taco seasoning (or 2 tbsp homemade seasoning)
  • 1/2 tsp salt (adjust to taste)
  • 1/4 tsp black pepper
  • 1 cup shredded cheddar or Mexican blend cheese

For the cornbread topping:

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1 tbsp sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 cup milk (or a non-dairy alternative)
  • 1 large egg
  • 2 tbsp melted butter (or oil)

Instructions
 

  • Preheat and Prep
    Preheat your oven to 375°F (190°C). Lightly grease your baking dish and set it aside.
  • Cook the Filling
    Heat a large skillet over medium heat. Add the ground beef and cook until browned, breaking it up with a spoon as it cooks. Drain any excess grease if needed.
  • Add the diced onion, bell pepper, and minced garlic. Sauté for 3-4 minutes until the vegetables are soft.
    Stir in the frozen corn, black beans, diced tomatoes, tomato paste, taco seasoning, salt, and black pepper. Let the mixture simmer for 5 minutes, stirring occasionally.
    Remove from heat and stir in half of the shredded cheese. Transfer the filling to the prepared baking dish.
  • Prepare the Cornbread Topping
    In a mixing bowl, combine the cornmeal, flour, sugar, baking powder, and salt.
    In a separate bowl, whisk together the milk, egg, and melted butter.
    Gradually pour the wet ingredients into the dry ingredients, stirring until just combined.
    Spread the cornbread batter evenly over the filling in the baking dish.
  • Bake the Tamale PiePlace the dish in the preheated oven and bake for 25-30 minutes, or until the cornbread topping is golden brown and cooked through. A toothpick inserted into the center should come out clean.
    Step 5: Serve and EnjoyLet the tamale pie cool for 5 minutes before slicing. Serve with sour cream, chopped cilantro, or a side of guacamole for added flavor.
