Ingredients
  

For the dish:

  • 12 oz spaghetti or fettuccine
  • 3 cups cooked turkey (shredded or cubed)
  • 2 cups sliced mushrooms
  • 1 cup frozen peas (optional)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced

For the sauce:

  • 4 tbsp unsalted butter
  • 4 tbsp all-purpose flour
  • 2 cups chicken or turkey broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried thyme (optional)

For the topping:

  • 1/2 cup breadcrumbs
  • 1/2 cup shredded mozzarella or cheddar cheese
  • 2 tbsp melted butter

Instructions
 

  • Cook the Pasta:
    Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente. Drain and set aside.
  • Prepare the Sauce Base:
    In a large skillet, melt the butter over medium heat. Add the chopped onion and minced garlic, cooking until fragrant (about 2 minutes).
  • Stir in the mushrooms and cook until tender, about 5 minutes.
  • Make the Creamy Sauce:
    Sprinkle the flour over the vegetables in the skillet, stirring constantly for about 1-2 minutes to form a roux.
  • Gradually pour in the chicken broth, whisking to avoid lumps. Add the heavy cream, Parmesan cheese, salt, pepper, and thyme. Stir until the sauce thickens, about 3-4 minutes.
  • Combine the Ingredients:
    Add the cooked turkey, frozen peas (if using), and the drained pasta to the skillet. Toss until the sauce evenly coats the mixture.
  • Assemble the Casserole:
    Transfer the mixture to a greased 9x13-inch baking dish. Spread it out evenly.
  • Add the Topping:
    In a small bowl, mix breadcrumbs with melted butter. Sprinkle the mixture over the casserole. Add shredded mozzarella or cheddar cheese on top.
  • Bake:
    Preheat your oven to 375°F (190°C). Bake the casserole uncovered for 20-25 minutes, or until the top is golden brown and bubbly.
  • Serve:
    Let the Turkey Tetrazzini cool for 5 minutes before serving. Enjoy it warm with a side salad or garlic bread!
