Banana bread's history dates back to the Great Depression in the 1930s when frugality was essential, and overripe bananas were repurposed rather than wasted. With the introduction of baking soda and baking powder during that era, banana bread became a popular and easy-to-make baked good.

Ingredients
  

  • 3 large ripe bananas (about 1 1/2 cups mashed)
  • 1/3 cup melted coconut oil (or any neutral vegetable oil)
  • 1/2 cup brown sugar or coconut sugar
  • 1/4 cup unsweetened plant-based milk (such as almond, oat, or soy)
  • 1 teaspoon pure vanilla extract
  • 1 3/4 cups all-purpose flour (or whole wheat flour for a healthier twist)
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon (optional)
  • 1/2 cup chopped nuts, chocolate chips, or dried fruits (optional)

Instructions
 

  • Prepare the Oven and Pan
    Preheat your oven to 350°F (175°C). Lightly grease your loaf pan or line it with parchment paper for easier removal.
  • Mash the Bananas
    Peel the bananas and place them in a large mixing bowl. Mash them using a fork or potato masher until smooth with a few small lumps.
  • Mix Wet Ingredients
    To the mashed bananas, add the melted coconut oil, sugar, plant-based milk, and vanilla extract. Stir until well combined.
  • Combine Dry Ingredients
    In a separate bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon (if using).
  • Mix the Batter
    Gradually add the dry ingredients to the wet mixture, stirring gently with a spatula. Be careful not to overmix; a few small lumps are okay. Fold in any optional add-ins, like nuts or chocolate chips, at this stage.
  • Transfer to the Pan
    Pour the batter into the prepared loaf pan and spread it evenly.
  • Bake the Banana Bread
    Place the pan in the oven and bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
