- 1 tablespoon olive oil
- 4 cloves garlic, minced
- 1/4 cup vodka
- 1 can (28 ounces) crushed tomatoes
- 1 cup heavy cream
- 1/4 teaspoon red pepper flakes (optional)
- Salt and pepper to taste
- 1 pound penne pasta
- Freshly grated Parmesan cheese for serving
- Fresh basil leaves for garnish
Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
Pour in vodka and allow it to simmer for 2-3 minutes, allowing the alcohol to cook off.
Add crushed tomatoes to the skillet, stirring to combine with the garlic and vodka.
Reduce heat to low and simmer the sauce for 15 minutes, stirring occasionally.
Stir in heavy cream and red pepper flakes (if using). Season with salt and pepper to taste.
While the sauce is simmering, cook the penne pasta according to package instructions until al dente. Drain well.
Add the cooked pasta to the skillet with the vodka sauce, tossing to coat evenly.
Serve the pasta hot, garnished with freshly grated Parmesan cheese and torn basil leaves.
