Equipment

  • Large skillet or saucepan
  • Wooden spoon or spatula
  • Pot for boiling pasta
  • Colander
  • Grater (for Parmesan cheese)

Ingredients
  

  • 1 tablespoon olive oil
  • 4 cloves garlic, minced
  • 1/4 cup vodka
  • 1 can (28 ounces) crushed tomatoes
  • 1 cup heavy cream
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • 1 pound penne pasta
  • Freshly grated Parmesan cheese for serving
  • Fresh basil leaves for garnish

Instructions
 

  • Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  • Pour in vodka and allow it to simmer for 2-3 minutes, allowing the alcohol to cook off.
  • Add crushed tomatoes to the skillet, stirring to combine with the garlic and vodka.
  • Reduce heat to low and simmer the sauce for 15 minutes, stirring occasionally.
  • Stir in heavy cream and red pepper flakes (if using). Season with salt and pepper to taste.
  • While the sauce is simmering, cook the penne pasta according to package instructions until al dente. Drain well.
  • Add the cooked pasta to the skillet with the vodka sauce, tossing to coat evenly.
  • Serve the pasta hot, garnished with freshly grated Parmesan cheese and torn basil leaves.
