Watergate Salad Recipe
Pinklady
The origins of Watergate Salad are as intriguing as its name. It’s believed the recipe was first popularized in the 1970s when Kraft introduced pistachio-flavored instant pudding mix. Around the same time, a recipe combining pistachio pudding with whipped topping, pineapple, and marshmallows appeared and quickly gained popularity. While the exact origin of the name is debated, some speculate it was dubbed “Watergate Salad” after the infamous political scandal to give it a catchy, memorable twist.

Large mixing bowl
Spatula or spoon
Measuring cup
- 1 package (3.4 oz) of instant pistachio pudding mix
- 1 can (20 oz) of crushed pineapple (do not drain)
- 1 cup mini marshmallows
- 1/2 cup chopped pecans or walnuts (optional, for crunch)
- 1 tub (8 oz) of whipped topping (like Cool Whip), thawed
In a large mixing bowl, pour the instant pistachio pudding mix. Add the can of crushed pineapple, including the juice. Mix well until the pudding powder is fully dissolved, and you see a green color and a slightly thick texture begin to form. This base is what gives Watergate Salad its unique flavor.
Add the thawed whipped topping to the mixture. Use a spatula to fold it in gently, ensuring everything is evenly combined. Folding (rather than stirring) helps keep the mixture light and fluffy.
Once the whipped topping is blended in, add the mini marshmallows and chopped pecans or walnuts if desired. Gently mix until all ingredients are evenly distributed. The marshmallows add a fun, chewy texture, while the nuts bring in a satisfying crunch that balances the creaminess.
Cover the bowl and refrigerate the salad for at least an hour before serving. Chilling not only enhances the flavor but also allows the ingredients to set and the salad to reach the right consistency.
Once chilled, your Watergate Salad is ready to serve! Spoon it into dessert bowls or add it to a larger serving dish if you're taking it to a gathering. You can also top it with extra nuts or a few maraschino cherries for a pop of color.
