Ingredients
  

  • 4 cups watermelon rind, peeled and diced
  • 2 cups apple cider vinegar
  • 2 cups sugar
  • 1 tablespoon salt
  • 1 tablespoon mustard seeds
  • 1 tablespoon whole cloves
  • 1 cinnamon stick
  • 1 lemon, thinly sliced

Instructions
 

  • Prepare the Watermelon Rind:Peel the tough green skin off the watermelon rind.Cut the rind into bite-sized pieces.
  • Brine the Rind:Dissolve salt in water and soak the rind overnight.
  • Pickling Mixture: In a saucepan, combine apple cider vinegar, sugar, mustard seeds, cloves, and cinnamon.Bring to a boil, stirring until sugar dissolves.
  • Cook the Rind: Drain and rinse the rind. Add it to the pickling mixture and simmer until translucent.
  • Jar and Preserve: Pack the jars with the rind and lemon slices.Pour the pickling mixture over the top.Seal the jars and refrigerate for at least 24 hours.
