In the spirit of channeling the tropical weather with this Caramelized Pineapple Cream Pie, I put the leftover pineapple to good use.

Plus I wanted to finally use this awesome copper pineapple cup. It was a birthday gift and is seriously adorable.

So this Pineapple Mule was born. It’s tropical, fruity and refreshing…everything you need on a cloudy day.
If *by chance* you don’t have a copper pineapple cup just lying around, this cocktail looks adorable in mason jars too (as does anything).

Pineapple Mule
Recipe makes one cocktail.
Ingredients
2 oz gold rum
2 tbsp crushed pineapple, drained
3-4 mint leaves
2 oz lime juice
3 oz ginger beer
Garnish
Wedge of pineapple
Slice of lime
Mint leaves
Directions
Make the cocktail: In a copper Moscow Mule mug (or red solo cup any glass) add 2 tablespoons of crushed pineapple with mint and muddle. Add ice and top with rum and lime juice. Stir and top with ginger beer.
Garnish: Top with a sprig of mint, a wedge pineapple and a slice of lime. Serve with a fun straw and a summertime playlist. Let’s toast to sunshine and warmer weather!
